Vinschger Golden Cubes Soup (serves 4)

3 Vinschgerl (Paarl)
2-3 egg yolks
salt and parsley to taste
1 litre of meat or vegetable stock

Cut up the Vinschgerl into cubes. Mix the egg yolks with the salt and parsley. Add the bread cubes to the egg mixture and stir well. Melt and heat the butter, add the bread mixture and fry until golden brown. Then add fried cubes to the hot stock as a garnish.

Vinschger Bread Soup (serves 4)

120g Vinschgerl (Paarl)
1 table spoon chopped onions
1 table spoon chopped parsley
2 table spoons flour
1 litre of water
salt, pepper
1 egg yolk
1 table spoon cream or creme fraiche
1 pair of (preferably pork) sausages
